I’m so excited you wanted to know more about the fabulous gluten free food featured on the CBS 4 Denver Interview I did Sunday, October 3, 2010.  It is the kick off of Celiac Awareness Month.  As you can see, there is much to celebrate if you eat gluten free in 2010!

When I was diagnosed with Celiac Disease 3 months after my 3rd child was born, I freaked out when they told me not to eat WHEAT, BARLEY, OATS AND RYE! Everywhere I looked I saw these ingredients.  I didn’t know that what you focus on expands and all I could see was a vast amount of ingredients with these ingredients.  On my own, I was failing miserably at healing my body.  I had 3 little kids, a new born, a 6-year old and an 8-year-old and we had just moved.  ARG!  When I was diagnosed I had gray ashen skin, sunken eyes and low brain function. Some people question if the brain function ever came back, but I know it did! 🙂

In 1992, when I was told to eat gluten free there was no internet.  Ha! Imagine that! Scary to think about how hard it was to find information, especially about a disease doctors knew little about.  Fortunately, I found information about a gluten free cooking demonstration at a Vitamin Cottage in Denver (more than an hour away).  I make the trek and found a room full of people further along the gluten free path than me and a table full of chili, cornbread and desserts!  Woo Hoo! Suddenly, my perspective changed and I began to focus on what I could have rather then what I couldn’t have.  What a change! All of a sudden, I was a world filled with food I could eat.  I could have fruit, vegetables, meat, chicken, pork, butter (yea butter!), and rice.  Before that moment, all I could see was total and complete starvation. Sad but true.

At this cooking class I learned about a gluten free baking mix called Pamela’s.  I thought it was outrageously priced, before I tasted it. Once I made my first batch of muffins, I was hooked!  This stuff was amazing!  Pamela’s changed my life and gave me a normal rhythm again.  We started most mornings with freshly baked muffins and fruit.  I cry now, remembering how incredible it was to eat muffins with my elementary aged kids again. I’m so thankful to Pamela’s and always will be.  For 18 years they have been impacting my life in positive ways.
